Types of Bird's Nest: Whole Cup, Strips, Thick Edge, Pieces and Red Nest

White strips, red nest and whole bird's nest cups compared on a tray at JUMAMA

Walk into any bird's nest shop and you will see the same ingredient sold in very different shapes, colours and prices. They are all edible swiftlet nest. What changes is the shape the nest is in, which part of the nest it comes from and how rare it is. Here is how to tell the main types apart, using photos from our own shop.

Four types of bird’s nest on plates at JUMAMA: pieces, red nest, strips and whole cups

The five types at a glance

Type What it looks like After stewing Best for
Whole cup 燕盏 A complete half-moon cup with fine, even layers Long, silky strands Gifts and special occasions
Thick edge 燕角 The dense ends where the cup was attached to the wall The most bite and chew People who love texture
Strips 燕条 Long pieces from cups that opened during cleaning Silky strands, close to a whole cup Regular eating and gifting
Pieces 燕碎 Small flakes and fine pieces Soft and smooth Daily eating, best value
Red nest 红燕 Orange to rusty-red pieces or cups A warm amber colour in the bowl A rare treat

Whole cup (燕盏)

The whole cup is the nest as the swiftlet built it: a half-moon cup woven from layer after layer of fine strands. It has to survive soaking and hours of hand-cleaning with tweezers without breaking, which is why fewer whole cups come out of every batch and why they cost the most per gram. Whole cups range from ivory white to warm gold. At JUMAMA every whole cup is hand-cleaned and graded 3A to 5A in our own workshop; see our dry bird's nest to compare the grades.

Thick edge (燕角)

Every cup has two thick ends where the swiftlet fixed it to the wall. These corners are the densest part of the nest, so they need a longer soak and keep the most bite after stewing. If you like a firmer, chewier texture, thick edge is a good choice. Try it in our thick edge 10-bottle set.

Strips (燕条)

Strips are long pieces of a cup that opened up during cleaning. They are the same nest as a whole cup, just no longer in one piece, so they stew into long, silky strands at a gentler price. They are a favourite for eating regularly and for gifts. Our 4-bottle strips set uses this cut.

Pieces (燕碎)

Pieces are the smaller flakes that break off during harvesting and cleaning. Good pieces are simply the same nest in smaller bits: they soak quickly and turn soft and smooth in the bowl, which makes them the best value for eating every day. When buying pieces, look for clean, pale flakes with no feathers or dark specks. Our 8-bottle set uses pieces.

Red nest (红燕)

Red nests range from orange to rusty red and are much rarer than white ones. Their colour is believed to come from the environment where the nest was built, not from anything added. Because red nests sell for more, be wary of red nest that is very cheap or an unnaturally even, bright red, as white nests are sometimes dyed. Buy from a seller who can tell you where the nest comes from. Read more about where red nests are found in our map of Thailand's bird's nest regions.

What they look like when stewed

Once soaked and slowly stewed, every type turns soft and translucent. Whole cups and strips give long strands, thick edge keeps a little more bite, and pieces melt into a smooth, silky spoonful. Red nest gives the bowl a warm amber colour. Our How to Enjoy guide shows how long to soak and stew each one at home.

Why the prices are different

All of these are real Thai bird's nest. The price reflects the shape and rarity: a whole cup that stays whole takes the most time and skill to clean and is the hardest to find, so it costs the most per gram. Strips, thick edge and pieces are the same nest in different shapes, so they cost less.

In our shop, every bowl of freshly stewed bird's nest at the same price holds the same value of nest. We simply adjust the weight for the type you choose. Dry and bottled nest cannot be adjusted that way, so the price shows the type and the amount of nest inside:

Product Type Bird's nest
Whole Nest in Bottle 典藏燕盏 Whole cup 30 g per 315 ml bottle
4-bottle set Strips 15 g per bottle
10-bottle set Thick edge 10 g per bottle
8-bottle set Pieces 7 g per bottle
Dry bird's nest 3A to 5A Whole cup Sold dry, to stew at home

Frequently asked questions

What are the main types of bird's nest?

The main types by shape are whole cup (燕盏), strips (燕条), thick edge (燕角) and pieces (燕碎). By colour, nests range from white to gold to the rarer red nest (红燕).

Is broken bird's nest lower quality than a whole cup?

Not necessarily. Strips and pieces are the same nest in smaller pieces. Look for clean, pale pieces with no feathers or dark specks. A whole cup costs more because it is rarer and harder to clean without breaking.

Why is whole cup bird's nest more expensive?

Fewer cups survive harvesting, soaking and hand-cleaning in one piece, and each takes more time and skill to clean, so whole cups cost the most per gram.

How can I tell if red bird's nest is real?

Natural red nest ranges from orange to rusty red and is rare. Be wary of red nest that is very cheap or an unnaturally even, bright red, and buy from a seller who can tell you where it comes from.

Which type of bird's nest is best for eating every day?

Strips and pieces are popular for everyday eating because they soak quickly, stew into soft, silky strands and cost less per bowl than whole cups.
