Serving, warming and storing — the way we do it at the shop. Choose your bird's nest below.
Dry bird's nest · Ready-to-drink bottled · Freshly stewed
1. Dry bird's nest
Our dry nests are cleaned in our own workshop and graded by hand, so they only need soaking and a gentle stew.
How to prepare
- Soak. Place the nest in a bowl of clean, cool water for 4–6 hours, until soft and fully expanded. Use about 3–5 g of dry nest per person.
- Check. Gently tease the strands apart and pick out any tiny bits with tweezers. Drain.
- Double-boil. Put the nest in a lidded ceramic pot with water, set it inside a larger pot of simmering water, and stew on low heat for 30–45 minutes.
- Sweeten. Add rock sugar in the last 10 minutes. Serve warm or chilled.
Storage
- Keep sealed in a cool, dry place away from sunlight — kept sealed and dry, it keeps for years.
- Once stewed, keep in the fridge and enjoy within 3 days.
2. Ready-to-drink bottled bird's nest
Stewed with rock sugar and fresh pandan leaf, then sealed and sterilised — ready to open and enjoy.
How to serve
- Chilled: refrigerate for a few hours and enjoy cold — refreshing on a hot day.
- Warm: stand the unopened bottle in hot (not boiling) water for 5–10 minutes. Please don't microwave the glass bottle.
Storage
- Unopened: keep in a cool, dry place out of direct sunlight, up to 18 months from the production date.
- After opening: keep in the fridge and finish within 3 days.
3. Freshly stewed (Bangkok delivery)
Cooked to order in our kitchen and delivered the same day — the same bowls we serve at our shops.
How to enjoy — hot or cold
- Hot: most of our bird's nest is delivered hot — enjoy it warm as soon as it arrives.
- Cold: prefer it chilled? Let it cool, then keep it in the fridge for a few hours and enjoy it as a refreshing cold dessert.
- Our coconut, mango and melon bowls are made to be eaten cold and arrive chilled — keep them in the fridge until you are ready.
- If your order comes with separate toppings, add them just before eating.
Storage & rewarming
- Keep in the fridge and enjoy within 3 days.
- To rewarm, pour into a bowl or small pot and warm gently in a hot-water bath or on low heat. Don't boil it hard, and don't microwave it in the bottle.
