How to enjoy
Your bird's nest, the way we serve it
Soaking, stewing, warming and storing, just as we do it at the shop. Choose yours to begin.
Dry bird's nest
Cleaned in our own workshop and graded by hand, so it only needs soaking and a gentle stew. Follow the five steps; tap a timer and we'll keep time for you.
-
1
Soak
Place the nest in a bowl of clean, cool water for 4–6 hours, until soft and fully expanded. Thicker pieces, like the edges, need the longer soak.

2
Pull into strands
Once it's soft, gently pull the nest apart with your fingers along its natural lines into thin strands. This helps it cook evenly and makes any tiny feathers easy to see.
-
3
Check
Look over the strands and pick out any tiny feathers with tweezers, then drain. Our nests are cleaned with water only, never chemicals, so a few fine feathers are natural.
-
4
Double-boil
Put the nest in a lidded ceramic pot with water, set it inside a larger pot of simmering water, and stew on low heat for 30–45 minutes in all.

Sweeten
Add rock sugar for the last 10 minutes. Serve warm, or chill it for a cold dessert.

A natural nest, never bleached
We clean every nest by hand with clean water only. No bleach, no chemicals. However carefully we clean, a few tiny feathers can remain; it's unavoidable with a natural nest, and they're easy to pick out after soaking. Each nest is built by a swiftlet, so no two are the same shape, and some look less neat than others. It's the same real bird's nest.
Ready-to-drink bottled
Stewed with rock sugar and fresh pandan leaf, then sealed and sterilised, ready to open and enjoy.
Refrigerate for a few hours and enjoy it cold. Refreshing on a hot day.
Stand the unopened bottle in hot (not boiling) water for 5–10 minutes. Please don't microwave the glass bottle.
Have the Concentrated Whole Nest jar? It's made for cooking: spoon it into chicken soup, morning congee or desserts. Once opened, keep it in the fridge and finish within 3 days.
Freshly stewed
Cooked to order in our kitchen and delivered the same day in Bangkok: the same bowls we serve at our shops.
Most of our bowls are delivered hot. Enjoy them warm as soon as they arrive.
Prefer it chilled? Let it cool, then keep it in the fridge for a few hours. Our coconut, mango and melon bowls are made to be eaten cold and arrive chilled.
- If your order comes with separate toppings, add them just before eating.
- To rewarm, pour it into a bowl or small pot and warm it gently in a hot-water bath or on low heat. Don't boil it hard.

Questions
Is bird's nest better hot or cold?
Both are lovely; it's personal taste. Most of our bowls are stewed and served warm, our coconut, mango and melon bowls are made to be eaten cold, and the bottles are delicious chilled.
Can I microwave it?
Please don't microwave the glass bottle. Stand the unopened bottle in hot water instead. To rewarm a fresh bowl, pour it into a bowl or small pot and warm it gently in a hot-water bath or on low heat.
How much dry bird's nest per person?
About 3–5 g of dry nest per person. Use the calculator in the dry bird's nest guide to work out a whole pot.
Why does my nest still feel firm after soaking?
Some parts, like the thick edges, are denser and need a longer soak. Keep soaking until it is soft and fully expanded, up to 6 hours.
Can I eat bird's nest during pregnancy?
Many mums-to-be enjoy bird's nest as part of their everyday meals. Ours is cleaned with water only, never chemicals, and cooked fresh. Bird's nest is a food, not a medicine, so if you have a food allergy, diabetes in pregnancy, or your doctor has asked you to watch your diet, please check with them first. Our postpartum herbal bowl is made for after the birth, not during pregnancy.
How long can I keep it?
Dry nest keeps for years if sealed and kept dry, and bottles keep 12 months unopened. Once stewed or opened, keep it in the fridge and finish within 3 days. Bowls made with milk or coconut milk are for the same day, and congee within 2 days.
Why is there still a tiny feather in my nest?
We clean every nest by hand with water only, never bleach or chemicals. However carefully we clean, a few fine feathers can remain. It's unavoidable with a natural nest. After soaking, pull the nest into strands and pick them out with tweezers.
Why do the nests look different from each other?
Each nest is built by a swiftlet, so the size and shape are never quite the same, and some pieces look less neat than others. The shape doesn't change how you soak and stew it.
